This salad focuses on brain fuel powering ingredients! The walnuts are a great source of your daily EFA's that are crucial for brain functioning, the pumpkin seeds provide a great source of Zinc, and many other fresh vegetables that will hydrate the body, and provide excellent sources of vitamins and minerals!
Ingredients for the salad:
- Handful of cherry tomatoes sliced in halves
- 1 baby carrot grated
- 1~2 Tbsps. of white onion diced
- 1/4 cup spinach roughly chopped
- 2 Hard boil eggs diced
- 4~6 Walnuts chopped
- Small handful of pumpkin seeds sprinkled on top
Ingredients for the dressing:
- 1 large tomato chopped
- 1/2 cup extra virgin olive oil
- 1/4 cup fresh squeezed lemon juice
- 2 cloves of garlic roughly chopped
- 1 Tbsp. Tahini
- 1 tsp. dried tarragon
- 1 tsp. dried thyme
- 1/2 tsp. salt
- 1/2 tsp. paprika
- 1/8 tsp. stevia
Directions:
1. For the dressing add all ingredients into a blender and blend until smooth.
2. When assembling the salad put the dressing on the bottom only if you plan on eating that day, otherwise you may want to leave it out, and it in right before eating to prevent having a soggy salad!
3. Layer the rest of the ingredients, close the lid, and shake until ingredients are well dressed, and enjoy!
