Chicken Quinoa Salad

This delicious salad is pretty quick and easy to make, it's a great salad to alternate and add any veggies you like! It has cool refreshing veggies with cooked veggies to complete the dish!

All you need is:
-1 chicken breast or left over chicken works perfectly.
- 1/2 an avocado
- 1/2 cucumber
- 1/2 pepper any color works
- 4 big carrots
- 1/2 onion
- approx 2 tbsp olive oil
- a couple splashes of apple cider vinegar
- 1 tsp Tyme
- 1 tsp rosemary
- salt and pepper to taste

Directions:
1. Cook quinoa in a pot
2. While quinoa is cooking cut up carrots, onion put about 1 tsp olive oil or more if needed sprinkle with Tyme, rosemary, salt and pepper. Place in the oven at 375C for about 15 mins or until golden brown.
3. Cut up veggies place in a bowl
4. Once quinoa cooked and cooked veggies done add to the bowl mix up and add the rest of the olive oil. You may add any extra pepper or salt you'd like. And there you have it! Hope you enjoy :)
