This salad quinoa bowl is so scrumptious! My friend and I just couldn't get enough... To be honest we didn't want the tasty sensation to end! It's a great bowl that combines both warm veggies and quinoa with a delicious sauce! I hope you venture out and try it, if you love your oven roasted veggies you will loooove this!

Ingredients:
Veggies:
1/2 zucchini
1/2 a large yam
1/2 white onion
4-5 strands of kale
Olive oil
1 tsp cumin
1/2 tsp paprika
1/2 tsp herbamare
Grain:
1/2 cup quinoa
Sauce:
1/4 cup tahini
1/4 cup almond milk
1/4 cup shredded coconut
1/2 lemon or 1 lime juice
1/2 tsp herbamare
1/2 tsp cumin
1/2 tsp turmeric
1/4 tsp chili powder
Small chunk of fresh ginger chopped finely
Pinch of cinnamon
Pinch of cardamom
Pinch of ground gloves
Pinch of garlic powder
Instructions:
1. Put quinoa on as directed 1/2 cup quinoa for 1 cup of water
2. Chop up all veggies excluding kale, place in a bowl and mix with olive oil and spices
3. Place on a cooking sheet and place in oven for about 25-30 mins at 400 celsius
4. When you have about 5 minutes left of cooking the veggies place kale in small piers on top and finish cooking
4. Take all sauce ingredients and place In a blender, blend until all is well mixed together
5. last place all items in a bowl and mix! Or you could just mix the veggies and quinoa and add the personal amount of sauce to your bowl you would like!
