Oh my goodness! These muffins are scrumptious...my taste buds we're thanking me after they tried one of these bad boys! It's a great light snack and you even get some veggies in for the day! :D
So... The ingredients your gonna need:
1/4 cup Coconut flour
1 tsp cinnamon
1/4 tsp baking soda
1/4 tsp sea salt
1/4 cup olive oil
1/4 cup carob chips ( I used the unsweetened version )
2 Eggs
1 1/2 cups shredded Zucchini
1/4 cup agave nectar
Instructions:
1. Take all wet ingredients (Zucchini, Agave nectar, 2 eggs, and olive oil) and put together in a medium sized bowl
2. In a small desperate bowl mix together the dry ingredients (coconut flour, cinnamon, sea salt, baking soda, and carob chips)
3. Now mix the dry into the wet ingredients
4. Pre-heat oven to 350 degrees
5. Get out a mini muffin tray, grease with coconut oil, or olive oil
6. Pour mixture about a big spoons amount in each and let bake for about 18-20 mins
7. Let cool and enjoy :)
