Lentil and kale soup

This soup is very delicious and the lentils make it very fiberlicious, and the kale i a great source of all round nutrients!! if you are not a huge soup fan, you can used uncooked lentils and the liquid will be absorbed and become thicker.

Ingredients:
2 tablespoons extra virgin olive oil or coconut oil
1 small onion, finely diced
2 tablespoons finely chopped fresh ginger
2 teaspoons ground cumin
2 teaspoons turmeric
1 1/2 teaspoons garam masala
1/8 to 1/4 teaspoon cayenne pepper
2 1/2 cups Cooked lentils
6 cups water
4 cups chopped kale
1 1/2 teaspoons sea salt
handful cilantro, chopped

Place olive oil in pot, heat up then add the onions, let those sautΓ© for about 6ish mins. Once those are too your liking add the ginger and other spices. let those cook for another minute. lastly add the lentils and water and cover the pot and let simmer for about 40 minutes. after the 40 minutes add the salt and kale, and allow mixture to cook for about another ten minutes with the lid off. once cooked if its liquidy (soup) you can add the cooked quinoa to add some ancient grain to the soup. If you used uncooked lentils and the mixture is thicker you can serve it overtop of the quinoa. If you like feel free to add some cilantro to garnish, Happy Fiber meal :)
