Light Kale Salad, is simple but delicious. It made a great side to my marinated chicken on a hot summers day. Hope you give it a try!
Ingredients:
Salad;
3 Big handfuls of Kale2 Baby carrots shredded (peeled)
1 Roma tomatoes chopped
1 Green onion chopped
Sprinkle of hemp seeds
Dressing;
1/2 a lemon juiced
1/4 cup olive oil
Pinch- 1/4 tsp of Sea salt
Pepper to taste
Directions:
1. Put kale into a bowl
2. Mix dressing together and pour into bowl of kale
3. Massage kale for 3-5 mins
4. Add the rest of the salad ingredients to the bowl and mix
5. Ground fresh pepper and serve
