This quick and easy quinoa recipe is great for taking to lunch or as a light dinner. With 2015 at the door step, take a step in the right direction and start a healthy choice when it comes to meal time, you will feel great, how can you say no to that!? :D
Ingredients:
1/2 cup quinoa
1-2 handfuls of spinach
8 cherry tomatoes
1-2 celery stalks
2 tbsp red onion
1/2 carrot
1-3 tsp olive oil
Pepper
Salt
1. Cook quinoa as directed
2. Chop all veggies
3. Once quinoa is cooked in pot add spinach so that it wilts a bit first
4. Then add all the rest of the veggies
5. Add olive oil, salt and pepper
6. Stir up and then serve up or put in a container for lunch the next day! Enjoy!
