This salad is a great supper idea on a hot summer day! It would be great to add to any BBQ, or as I did today added some hard boiled eggs :) All the flavours go so well together. Hope you give it a try, enjoy!
Salad:
2-3 Big handfuls of Spinach
4-5 Strawberries sliced, and halved
A big handful of Pecans diced
2 big handfuls of blueberries
Some onion( I eyeballed how much I wanted) sliced or diced
Dressing:
1 tbsp apple cider vinegar
2 tbsp olive oil
Sprinkle of chia seeds
1/8 tsp paprika
1/8 tsp stevia
1/2 lemon juiced
Salt and Pepper to taste
Directions:
1. Very simply add all salad ingredients in a bowl and mix.
2. For dressing add all ingredients into a bowl and whisk till well combined and drizzle desired amount onto salad, and serve!
I also added two hard boiled eggs to the salad. This gave it some extra protein!
