This tasty salad is refreshing, and packed full with protein, enjoy!
Ingredients:
1-2 cooked chicken breasts, roughly diced
1-2 tbsp. Greek yogurt
1/2 lime, juiced
1/2 Yellow pepper, diced
1 tomatoes, diced and seeded
1/4 a cucumber, diced and seeded
1 tbsp. onion, diced
1-2 tsp. Dijon mustard
Salt & Pepper to taste
Directions:
1. Put diced chicken and yogurt in a bowl. Mash with a fork to combine.
2. Add the remaining ingredients in, and serve on top of crackers/ chips, or in a chickened salad sandwich!
