Chicken Pattie Bowl 🍲

This may just be my newest obsession, and it’s sooo easy to make! I’m telling you, you have got to try chicken patties and rice bowls, it won’t disappoint! I’m going to make this short and sweet, just like this recipe:

Chicken Patties:

  • Ground chicken 
  • Spices- have fun! I didn’t use any precise measurements, but 1/2 tsp. - 1 tsp. Should be a good place to start:
  • Garlic powder 
  • Oregano
  • Salt 
  • Pepper 
  • 2 tbsp. Almond flour 
  • 1 tbsp. Avocado oil 
Instructions: 
* First, take a large cooking pan on medium high heat, and add avocado oil- preparation for the patties. 
1. Place ground chicken in a bowl, then mix in various spices- I went for a more savoury herby burger. 
2. Then add in the almond flour.
3. Mix all ingredients with your hands or a spatula. 
4. Once combined, create small little patties (I made about 7). 
5. Place the patties into pan that should be hot with the avocado oil. 
6. Flip burger 3-5 times in a 12-15 minute period. Make sure they are golden brown on the outside, and white (cooked through the middle). 
7. Once fully cooked, add to assembled rice bowl. 

Rice Bowl:
  • Cooked Brown Rice (1 Cup brown rice to 2 Cups water w/ a dash of salt in a sauce pan on high heat. Once it comes to a boil turn it down to medium- 5/6) once cooked with no water left, fluff with a for or spatula. 
  • Carrot-slaw: Carrots grates, cherry tomatoes sliced, 1/4 a red onion, diced, green onions, chopped, salt, pepper, 1/2-1 lemon, juices). 
  • Artichoke hearts- I used pickled ones in a jar
  • Green olives- I used ones from a jar 
Instructions: 
1. Place cooked brown rice in bottom of bowl, top with carrot slaw, artichokes, and green olives. 

Dressing :
  • 3 tbsp. Olive oil or avocado oil, 1 tbsp. ACV, 2 tsp. Dijon mustard, salt and pepper to taste. 
Instructions: 
1. Put all ingredients together in a small bowl and whisk together. 
2. Drizzle on top of rice bowl, and bon appetite!!
