This salad is definitely one of my new favourites, and when you make it, you will understand why! I mean goats cheese, rice, apples... sounds amazing to me! Let’s get started:

Ingredients:
- 1 1/2 cups cooked brown rice— follow directions on package
- 2 Apples, I usually use green apples
- 1 Bell Pepper, I use any colour— but I prefer red in this recipe
- 1/4 cup Purple onion, diced
- 3 Stalks of celery, chopped
- 1-2 Garlic bulbs, crushed/ or finely diced
- 1/4 Cup Goats Feta cheese— I use one with herbs in it, but you don’t have to (Can omit the goat cheese to make vegan friendly)
- 2 Tbsp. Avocado or Olive oil
- 1-2 Tbsp. Lemon Juice— 1/2 a lemon juiced
- Salt and Pepper to taste
Instructions:
1. While brown rice is cooking, dice and cut up all your veggies and fruits (apples, bell pepper, celery, purple onion). Once cut place them all in a big mixing bowl.
2. To this bowl, add in the dressing (oil, lemon juice, garlic, and salt and pepper). Mix and coat all the veggies and fruits.
3. Once everything is coated and the rice is ready, add rice into the minute and mix together.
4. Lastly, add the goats cheese to the rest of the salad and mix in well! Eat right away, or chill the salad in the fridge before serving!
5. Enjoy this delicious salad that’s perfect as a side dish, and picnic or all by itself π!
